A DELECTABLE INDULGENCE

Mango pudding recipe. 

A simple , sweet and scrumptious dessert recipe , coming straight from my friend VIDHYA'S kitchen. I really want to extend my heartiest thanks to Vidhya for sharing this recipe with us.
I could swear by her never fail recipe for the mango pudding. Each time she has made this for us, she has had to go home with empty dishes. So when I started to post recipes on the blog, I knew  I was  getting this pudding recipe to try it for myself and then forward it, for you all to try too.
This is a no fuss, no mess kind of a recipe and is super easy to make.

 The INGREDIENTS list is as follows:-

Mango Pulp - 1 can
Gelatin - 2 packets
Evaporated Milk - 1 can (12 fl oz.)
Heavy whipping cream - 1/2 pint or 236 ml.
Granulated sugar - 1 cup
Few saffron strands
Serves : - 10-12

Method - 

Dissolve the  gelatin in 1/2 cup cold water.
Cook mango pulp and gelatin for a few minutes in a saucepan and then add sugar and saffron strands.
Cool the mixture , but do not allow it to set (say  40-45 minutes.)
When luke warm, add evaporated milk and the heavy whipping cream, and set in the refrigerator for several hours (preferably overnight).

=> 2 scoops of the mango pudding , couple of dollops of whipped cream and  YOWZA !
